This recipe changes often depending on what I have on hand to throw it. I just alter the ingredients in My Fitness Pal to make sure they macros still work for me.
This is the most recent variation:
Calories: 260 per serve
2% Carbs – 72% Fat – 26% Protein
- 16 eggs
- 100g Feta
- 50g Mozzarella cheese
- 2 cups of baby spinach chopped
- 40g chunky dip (today was Roast capsicum with cashews and parmesan)
- A bunch of Asparagus chopped up into bite-size pieces (6 spears) – tinned works as well
- 2 tablespoons of olive oil
Sprinkle the Mozzarella on top and bake at 175 degrees until cooked through. Around 25 minutes.
