Asparagus Quiche

This recipe changes often depending on what I have on hand to throw it.  I just alter the ingredients in My Fitness Pal to make sure they macros still work for me.
This is the most recent variation:

Asparagus Quiche.

8 Serves
Calories: 260 per serve
Fat: 20g
Carbs: 1.5g
Protein 16.3g
2% Carbs – 72% Fat – 26% Protein

Ingredients:

  • 16 eggs
  • 100g Feta
  • 50g Mozzarella cheese
  • 2 cups of baby spinach chopped
  • 40g chunky dip (today was Roast capsicum with cashews and parmesan)
  • A bunch of Asparagus chopped up into bite-size pieces (6 spears) – tinned works as well
  • 2 tablespoons of olive oil
Throw all the ingredients in a bowl except the Mozzarella.  Mix well and place in a baking dish.  If I’m using a baking dish I grease it first with the olive oil, but if I’m using a silicone cupcake tray I’m too lazy and just throw the oil in the mix.

Sprinkle the Mozzarella on top and bake at 175 degrees until cooked through.  Around 25 minutes.
